I actually used halibut because we aren't huge fans of cod. Next time, I'd drain the tomatoes first as there seemed to be too much liquid. We had this with steamed brown rice and broccoli. A quick, easy, and very flavorful dish. Pretty on the plate too - I'd make this for guests.

Loved this recipe. The nice thing about poaching is that, once you have the technique, you can play with it. We used fresh garlic, basil and two Roma tomatoes instead of the canned combo. Took a couple minutes longer but was well worth it. Because of the fresh ingredients we simmered the broth about 5 minutes before adding the fish. We had some Hatch green peepers in the frig we roasted the week before so we chopped them up and threw them in. We added the olives to the liquid just before done so they were heated through. It was great!

This is a quick, flavorful healthy meal. I make it with double the tomatoes (a large can) because I like it more like a stew. I served it in pasta bowls. And I sub chicken stock for the water. Served with crusty Italian bread that I brushed with olive oil and salt and pepper and toasted under the broiler.

Very easy recipe to cook. Kids liked it and sopped up the excess liquid with crusty french bread. Forgot the capers once and really didn't miss them.

This was very watered down. The fish absorbed very little of the flavorful broth. I served it, however, with a delicious pasta puttanesca (recipe from cooking light). I ended up putting the pasta sauce on the fish for more flavor. The puttanesca sauce has the same ingredients, so it made shopping easier.

Add brown sugar to taste!! It compliments the red pepper. Saute garlic with onion. Serve on top a bed of spinach. Healthy and delicious.

What a great dish! My cod was also thick so I did cook it for nine minutes. Served over orzo with a sprinkling of feta cheese, it was a satisfying meal!

Followed the broth proportions but subbed clam juice for water. Added 1 can of white beans (drained and rinsed) and 8 littlenecks to the poaching liquid. Put in 4 sections of cod when the clams had just begun to open, sprinkled with a handful of torn basil, then covered to poach til the clams opened, less than 5 min. Olives to finish. Served in wide bowls with warm garlic ciabbatta sticks to soak up the broth. And the rest of the white wine, of course. Pretty good.

This was really delicious and easy. I added white beans and served it with couscous. I would definitely make it again and want to try it with another white flaky fish.

This is my new favorite way to prepare cod. Served in a shallow bowl over angel hair pasta to make good use of the extra sauce. The cod fillets were a bit thick, so I had to cook them 9-10 min.

I thought this was a great recipe. Just a few mods. I sauteed an onion with the garlic. At the advice of other reviewers (thanks, btw) I also added some white beans and cut back on the stock a bit (I like it brothy). Omitted the olives as the hubby doen't like them. Served over orzo. Yummy & very easy!

Very simple, fast, and few ingredients. Absolutely delicious. Everyone loved it. I added a little more red pepper flakes and a bit more dried basil. Salt and pepper were added after plating. You can serve your in-laws this dish.

This was very easy & delicious. I substituted chicken broth for the water and cut it down to about 1/2 cup, used fresh tilapia (no cod available where I live), added jalapenos & simmered the sauce a while longer. Served over sauteed spinach & canneloni beans and topped with fresh grated parmesan

This a great recipe that my spouse and I loved. The fish took a little longer than the 5min-- but that was probably due to the thickness. When the fish was done, we took it out and crushed the tomatoes and reduced the broth (took another 5-10 minutes) to more of a thicker broth/sauce-- so delicious!!!

Possibly worthy of a special occasion, but borderline. Excellent for a weeknight meal. Unlike many recipes that claim they're spicy, this one really is and I LIKE that. Served it with Forbidden Rice cooked with vegetable stock which was good. Next time I'd add some steamed green beans or broccoli for additional color on the plate. Good solid recipe which has the added bonus of being low cal and healthy.

Good idea, but I don't think that this recipe was tested before it was printed. The recipe was way too watery -- almost soupy. Also, the directions were wrong. They should read the "next 5" ingredients and not 4. My husband thought it is worth another try, although I will eliminate the water completely and, if necessary, will use a small amount of chicken broth.

Loved it! Hubbie said it's one of his top 5 recipes (for home cooked). I sauted a shallot to start with and used fresh garlic. I also added a can of northern white beans (drained and rinsed) and skipped the water. It was FABULOUS! Definitely more stew like without the water.

While my husband and I really enjoyed it, my kids were not fans. The sauce is a bit watery. I used flounder, and while I really don't like flounder, for the first time, I enjoyed it. I will try it again later with cod.
