  • Step 4 – Add vanilla and mix well in the creamy fudge mixture. If you are using nuts, add them now, too.

  • Step 5 – Finally, pour into prepared pan and let cool completely.

Lift foil out of pan and cut into small squares. You don’t need much to satisfy your sweet tooth and a little goes a long way. It is the best.

Expert Tips:

  • Baking Pan – To easily remove the fudge from the baking dish, we recommend lining the pan with parchment paper or aluminum foil. Allow the parchment paper to overhang in the 8-inch pan to easily remove the fudge. We find that it is easier to cut in when it is not in the pan.
  • Melting Ingredients – While the mixture is heating on the stovetop make sure to stir constantly with a wooden spoon. This keeps the mixture from burning and it melts faster.
  • Adding Ingredients – If you are adding in nuts, coconut or cranberries add it in after melting the chocolate.
  • Sweetened Condensed Milk – We used evaporated milk in this recipe instead of sweetened condensed milk. Because of the sugar that is added the evaporated milk worked perfectly in this recipe.

How to Store Leftovers:

Store fudge in an airtight container in the refrigerator, you can also leave at room temperature. This fudge will last about 5 days if stored properly. After years of testing recipes, we're pretty sure we have a handle on the most popular fudge flavors, but chocolate and cherry will always rank high on the list.

Is milk chocolate or semi sweet chocolate better for fudge? ›

Chocolate: you may use semi-sweet chocolate or dark chocolate. If you want milk chocolate fudge, I suggest using a combination of milk and semi-sweet, so that it's not overly sweet. But this is up to you! You could also use semi-sweet chocolate chips, but I suggest sticking to high-quality chocolate if possible.

Why is condensed milk not advisable? ›

Downsides: Higher Sugar Content. Condensed milk is significantly higher in sugar than granulated sugar, with around 60g per 100g compared to 100g per 100g for sugar. This can be detrimental for those watching their sugar intake or managing conditions like diabetes.

Why is my condensed milk chocolate fudge not setting? ›

The main reason is that your Fudge has not reached the optimum temperature. If your mixture only reaches 110 or 112 degrees Celsius it will always be soft. That's why we recommend investing in a sugar thermometer. Another reason your Fudge is not setting is that the ratio of liquid to sugar is too high.

Should you stir fudge while it's cooking? ›

Brush the sides of the pan with a wet brush at the beginning of cooking to dissolve sugar crystals stuck to the sides. Never stir the mixture during cooking or sugar could crystallize again.

Why is my old fashioned fudge not hardening? ›

Fudge usually behaves this way when it's not cooked to a high enough temperature (due to oversight or a faulty candy thermometer).

Why did my fudge turn out like taffy? ›

If the fudge is very soft and slightly chewy then it is possible that it did not quite cook to soft ball stage and next time the mixture should be cooked to a slightly higher temperature (soft ball is 112-116c/235-240F and a sugar or candy thermometer can help).

What gives fudge its firm texture? ›

Cooking. Cooking is necessary to dissolve sugar crystals and to evaporate part of the water in the cream. The length of this step has a direct impact on the firmness of the fudge. As water gradually evaporates, sugar is concentrated and the temperature of the mixture rises above 100°C (212°F).

How do I get my fudge to harden? ›

OPTION 2) Freeze it overnight. Cut it into squares. Cover each square thickly in melted chocolate, ensuring no part of the fudge is exposed. Cross your fingers and hope that the chocolate sets firmly before the fudge starts to thaw, and later impress your friends as you present them with your soft-centred chocolates.

Can you beat fudge in a stand mixer? ›

Pour the mixture over the chocolate, being sure to shake, not scrape, the mixture from the pot. Set aside to cool for 10 to 12 minutes. (This prevents a grainy consistency.) Using the clean wooden spoon or a standing mixer on low speed, stir or beat the mixture until the chocolate is completely melted and incorporated.

What makes fudge softer? ›

If you don't heat your fudge to a high enough temperature, you'll end up with a soft product. And if you heat the mixture too much, your fudge may be harder than you'd like.
